Torches don't stay alight forever, so it's wise to carry two of them in case. Torches are useful to see when mining without a miner's helmet. You may equip a torch and a stone axe at the same time, but not with a pickaxe which makes you mine quicker (and take less stamina to achieve).
Torches are also useful in torchposts. You can pick torchposts up and take them into mines to light your way. Make sure you have a torch on hand, because when the torch runs out you will need it to find the torchpost again!
Wielding two lit torches expands the area of illumination that provided by a significant amount. Useful for when exploring caves.
